Chicken Pitta

I just made this, thought I would share it as it was soooo good!

Serves 1
Syns: 1 on an Original and Orange day

You'll need:
1 Chicken Breast
1tsp Fresh or dried mint
1tsp Fresh or dried Parsley
1tsp Curry powder
1 Chicken oxo/bovril
2 Lettuce leaves
1/4 Red pepper
1 Slice of a red onion
4-5 Cherry tomatoes
Helmanns extra light mayo
1 Wholemeal pitta

Cut the chicken up very very finely, no bigger than 5mm pieces, place in a saucepan with the chicken oxo made up with 100ml boiling water, along with the mint, curry powder and parsley. Bring the the boil and simmer for 10 mins.

Meanwhile, shred the lettuce and add to a bowl. Chop the pepper, onion and cherry tomatoes - add to the lettuce and toss using your hands.

Once the chicken is cooked scoop it out using a holey spoon (I don't know what the technical term for this is..... but I think you know what I mean) so the sauce remains in the pan. Add the chicken to the salad. Mix 1 tsp of mayo with 2tbsn of the remaining sauce and mix well.

Toast the pitta on both sides and when cool enough cut open and spread the mayo inside, then stuff it with the salad, then just NOM it! :)
