Firstly, the idea has come from the chickpea cake just tweaked it to my tastes and done them as buns instead of as a cake. Please try it, they are really nice unless my tastebuds are wierd.
I believe it to be around 3syns for the whole lot. And for that little extra why now try a tsp of lemon curd mixed together with a light laughing cow (1/2 syn) and make them into butterfly buns, scrummy scrummy.
1/ A can chickpeas drained and rinsed
2/ 1.5 cups canderel or sweetener
3/ 3 eggs
4/ 1tsp baking powder
5/ lemon juice from the bottle, roughly a tablespoon
6/ a sprinkling of vanilla & almond essence
6/ 2 tbsp lemon curd
Place all ingredients in a blender and blitz for a few minutes until nice and smooth. Now pour into cake buns until 3/4 full (makes 12) and bake for 30-40 minutes at gas 4 180°C or until golden brown.
