Chunky Chicken Chowder

    chunky chicken chowder:):):)

    serves 2
    points per serving 3.5

    1 medium skinless chicken breast about 165 gramms, diced
    425 ml chicken stock
    2 medium carrotts grated
    2 medium leeks sliced
    1/2 medium swede diced
    2 tablespoons dried yellow lentils rinced (i used red)
    300 ml semi skimmed milk
    2 tablespoons fresh, frozen or canned sweetcorn
    salt and freshly ground black pepper

    place all ingredients except the milk and sweetcorn in a large saucepan and bring to the boil.
    turn down the heat and simmer for 25 - 30 mins and then add the milk and sweetcorn. season, warm through for another 10 mins on a gentle heat.
    freezing recommended
