ok just played around with a recipe out of rose elliots low carb book n made cinnamon muffins n theyre lovely so thought i would share
115g of milled flax seed (only 1.9g carbs per 100g!!)
40g butter
2 beaten eggs
cinnamon
splenda
vannila extract
water
basically mix it all together, put enough water in to make it into a mix and cinnamon to taste, put into cake cases and cook in the oven gas mark 5 for aroud 20 mins or til a scewer comes out clean. made 8 with that so low low carb each one.
the recipe used soya milk instead of water but i didnt have any lol
flax seed is so much lower in carbs than almond flour that the recipe suggests
