cooking your muffins

Hi all

Still experimenting to get the muffins right, so advice is appreciated!

I'm using silicone muffin pans, and cooking for about 25-35 mins. However, the tops are crispy and brown but they are still wet underneath. I then have to scoop them out onto a baking tray to crisp and cook the underside.

Anyone else have this problem, and any ideas how to solve it?

I leave them to stand and they firm up. Mine are small ish (5-7 per 2tbsb oatbran) and I cook for 20-22 mins at gas mark 4. If I'm in a rush and take them out the tray immediately they're mush. If I leave them in it a bit it's much better! X
 
All ovens are different.
You can lower the temperature a bit..
I'll bake perfect muffins after a few tries.
 
I've never had that problem. I stand my silicon muffin cases on a baking tray. Is your oven a ventilated one? Mine take 20 mins in that one. In the other "older" one, I turn the tray round after 20 mins for a further 10 mins... Gas Mark 6°C / 200°
 
It seems to be trial and error to find the right temp and time for your oven. I now cook mine at 180c for around 35 mins and they come out light and springy resembling fairy cakes.
 
Vixx we must cook in the same oven I find that temp and time and they are perfect x
