I bought myself a julienne peeler today as I'd been itching to have a go at courgette spaghetti. I used the peeler on the courgette, then dried it between kitchen paper before dry frying for a couple of minutes in a non-stick pan with a spritz of Fry-lite, salt and pepper. I another pan I cooked some spinach and I cooked a frozen salmon fillet with herbs and lemon in the microwave. My whole meal took about three minutes to cook!!!
The courgette was lovely as it still retained a little "bite" Will definitely be having THAT again....
