Couscous Stuffed mushrooms

Just made a meal that is quite low on the calories so thought i would share it as it was tasty and filling.

serves 2

1 pack of mediterrean couscous (i used Ainsley Harriotts Moroccan medley)
half a large onion
half a pepper
4 large mushrooms
3 cloves of garlic
cheese and onion risotto (i got a pack from aldi thats called Cucina)
a drizzle of oil
30g flaked Parmesan cheese

Roast the mushrooms for 30 mins at 190 with a drizzle of oil.
Chop the pepper and onion and fry until soft. Mix up the couscous and then mix in the pepper, onion and half the cheese.
once the mushroom have been in for half a hour fill with the couscous mix and top with the rest of the Parmesan then put back in the oven for 10 to 15 mins until the cheese is browned. whist this is doing cook the risotto in the hob and then serve.

For the ingredients i used it worked out at 513 calories and it was delicious.
