Creamy broccoli soup

Just made this for lunch - thick, creamy and VERY filling.

1 onion, chopped
1 large potato, peeled and chopped into small pieces
1 head of broccoli, chopped into small florets
400mls boiling water (this makes a very thick soup so add more if you want)
Veg OXO cube
Pinch each of salt, garlic powder and cumin

Chuck all ingredients into a pan, cook for 20 mins or until veg soft. Blend and eat!

I'm guessing the potato?

I love the ww spinich and broccoli soup and I worked it out so I can use it on sw plan and use philidelphia cheese as a heb and it's creamy cheesy n yum.

Will try the free one tho :) mmmm

Yep it's the potato - I was sceptical too but honestly it really works! Had the rest for lunch today and stirred in some fat free natural yogurt which made it even tastier.

Just made this and needed to add lots of salt and pepper for a bit more flavour...but impressed with end result. Thanks :)

Laughing cow blue cheese squares could be interesting as well! Or perhaps better with cauliflower rather than the broccoli but the recipe would be easily adapted

I just made this for lunch - very good!

I didn't have any cumin, so used curry powder, left out the garlic powder as I didn't fancy it and used 600mls water and 2 veg oxo cubes, as I don't like really thick soup! Oh and I added loads of mixed green, red and black peppercorns...

Very warming and filling for such a cold, damp day - thanks!
