Delicious lunchtime recipe!

Hello guys!

I just had a really delicious lunch and thought I'd share it with you :)

My car is in the garage and I haven't been to the shop for ages. Didn't even have any oil!

So I fried half an onion in a teaspoon of peanut butter (10g, 60cals), then added 2 carrots and the end of a bunch of celery I had found in my fridge, along with the rest of a pack of frozen broad beans lurking in my freezer. Boiled it in some veg stock, then blended.

And it was lovely! For extra protein, I put in a tin of drained tuna, but you can leave that out if you want to eat less / don't like tuna.

The whole thing will have been no more than 250 cals, but I am SOOOOO full. :D

I'll be honest, not sure I'm too keen on the idea of that recipe but thanks for sharing!
 
Yeah definitely, I'm impressed you managed to find something to make that you liked with so little in the house!
