Green Day Easy Peasy Cheesy Pasta

I find this a really quick and easy lunch and it's free on green!!

  • Any type of pasta (I use Penne), as much as you want.
  • 1tbsp skimmed milk
  • 2 laughing cow light trianges (part of your healthy b)
  • Mushrooms and onion, adjust the amount to the pasta. Any other veg you fancy can go in aswell.
  • 1tsp mixed herbs
  1. Cook the pasta as usual.
  2. While pasta cooking fry off the mushrooms and onions in fry-light.
  3. Put the laughing cow triangles and cheese into a bowl, mix until a smooth "sauce".
  4. Drain pasta and return to pan on very low heat.
  5. Add in the vegetables an
  6. Stir in sauce and herbs and heat through - the "sauce" sticks to the pasta so don't expect it to look really saucey!
Voilla, easy cheesy pasta! Me and my OH love it, I hope some others will too.
My OH adds extra cheese on the top too.
