Just thought I'd post a thread about eggs to share my ideas, and to get your ideas too. I have chickens and while they're not currently laying eggs, hopefully they'll start up in the Spring, so gathering ideas is a good thing! Apart from all the obvious uses of eggs, some I've liked recently are:
- Egg into mashed potato (even nicer with some cheese as your HE). The cowboy pie in the recent SW mag has egg mixed through the mash and also brushed onto the top - I loved it. (edited to add - the hot mash cooks the egg and it makes the mash taste creamy).
- Eggs poached in spicy/paprika tomato sauce. Good way to use up left over pasta sauce/ratatouille etc.
- Nasi goreng - stir fried Indonesian (I think) rice dish with veg, peas etc. in it, and a fried or poached egg on the top. Love the way the yolk goes into the rice
- softly scrambled eggs in at the end of a stir fry
