extra easy pork curry

Ingredients : Serves 4
Fry Light
450 g/1 lb pork fillet, cubed
1 onion, sliced
2 garlic cloves, crushed
5 ml/1 tsp chili powder
10 ml/2 tsp ground cumin
5 ml/1 tsp ground cinnamon
10 ml/2 tsp ground coriander (cilantro)
300 ml/0.5 pt/1.25 cups water
Salt and freshly ground black pepper
150 ml/0.25 pt very low fat plain yoghurt
Boiled rice, to serve
Method :
Heat the pan and frylight (saute) the meat until browned on all sides, then remove from the pan. Add the onion and garlic and fry until lightly browned, then stir in the spices and cook for 1 minute. Stir in the water, season to taste and bring to the boil, then simmer for 1 hour until the pork is cooked. Stir in the yoghurt and reheat, then serve with rice

Very simple and nice curry one to definately try and can be used with chicken, beef, lamb or just with vegetables.
