Thai Chicken

3lbs whole chicken, cut in pieces-Place in broiler pan, broil 425f 20-30 minutes

1T cornflour 1 T water. Combine.

3 garlic cloves, minced
1 T ginger, minced
1/4 c scallions, minced
2 T mint, minced. Cook in 2 t olive oil or water. Stir in cornflour mix.

1 c nf milk
2 T soy
1/2 t turmeric
1/2 t chili sauce/red pepper flakes/some form of chili heat
1/4 t coconut extract
1/4 t salt. Add to herb mix above.

Return chicken to pan. Coat with sauce. Also great as a sauce with shrimp or lamb.
