Cheese and mushroom omellete for dinner tonight!
 
Dinner tonight was hot wings and BBQ ribs! Oh lord, soooo good! It was a pretty carby meal, with the hot sauce, BBQ sauce and sour cream, but god, it was worth it! And I still stayed within my carb limit all day.

I am totally addicted to Nandos sauce at the moment!! And it's really low in carbs too thankfully!!

I have a dollop of mayo drizzled with Nandos sauce with most meals.....:)

I'm the same I eat everything with Nando's sauce, but I was doing it before I started Atkins so really pleased that it is low in carbs. Some are lower than others but the one I have at the moment, also has garlic in it is quite low as you don't need a lot of sauce.

Little bit of red pepper, spring onion , garlic and seaoning all fried up in olive oil, very tasty!
 
Needed to share a NOM dessert I just made (no photo I'm afraid as it wasn't much to look at!)

Take 1 tablespoon of whipping cream .. whip it until soft peaks
Heaped teaspoon of philli .. bung it it and keep whipping.
Throw in 5 blueberries ..
finally crumble in 2 "spenda" meringues ...

Like a yummy, yummy YUMMY eton mess ... with a cheesecake flavour. I have been craving cheesecake and this did without the base. Give it a try - next time I do it ill put it in a fancy glass and show you a photo!
 
How are you making Splenda meringues? ..... Just realised.....I'm still cream and cheese free and not really noticed!
 
Splenda Meringues :

2 egg whites
half a teaspoon of cream of tatar
12 flat teaspoons of spenda (it suggested 15 but that's too sweet for me).

Whisk the egg whites until soft peaks
Add the creme of tatar and the spenda a bit at a time (I make mine in the Kenwood) until silky and stiff peaks.
Pipe or "bung" on to grease proof paper, bake at 70 degrees c for 2 hours.

They keep in an air tight container for up to a week

You don't wanna know how fast I ate it! ....... Never touched the sides lol!
 
Lung today, pâté on flaxseed crackers and loft over salad, light and mighty fine
