frozen filo pastry sheets

Ive seen a couple of recipes which need filo pastry, however one thing which has put me off ever buying it is defrosting the sheets.
do you have to defrost the whole pack at once or can you easily defrost as many sheets as you require at a time?
as i obviously wouldnt use a whole pack for one recipe
 
Why not buy it fresh instead of frozen? Then you can divide the pack into portions, then wrap and freeze them individually.

Thank you.... I feel like a right idiot now lol, the thought never crossed my mind.
I haven't dealt with pastry since starting slimming world and before I used to make my own and stick with short crust, so never had to buy ready made. Still what an idiot not thinking of fresh
 
Well, I only thought of it because I have actually only ever seen it fresh in the shops and not frozen (I don't look at frozen stuff usually, because I don't have a freezer). So please don't feel like an idiot!
