There is nothing "a little salty" about Gammon, it's just Thick cut wiltshire cure - Wiltshire cure is steeping the joint in brine for days on end! it has a high salt content and will ruin your weight loss, I reckon
You can have lean beef, lean pork too, you can make things like chilli and spag bol out of lean minced beef..... you have lots and lots of options!

I really don't like fish at all but now and then I manage a piece of salmon but can't say I enjoy it. I am going to make a shepherds pie tomorrow night with a celeriac and parsnip topping ...I think that will be nice
You say you're getting bored of ham (good!) and chicken, but have you tried some recipes from the book or our recipe section? Turkey mince also is a great alternative, and with the BBQ season upon us, marinating lean meats (not pork) is a great way of livening up the "lazy Dukan fodder".
