Green peppers

I have a glut of green peppers as I bought 2 bags as they were on offer forgetting I'd already got another bag and a half at home.

So the question is what can I do with them.

stir fry with some pork, mushrooms and onions and soy sauce and serve with noodles,
roast in oven?

if you have plenty of other veg, roast them definately.

green peppers also work well with beef in a curry or similar.

Maybe make a peperonata??

Fry in frylight with fresh tomatoes, garlic, onions and some parsley!!!

Not sure if this is any help. I buy big bags of peppers when I do my shopping then slice them and freeze them, do the same with onions and mushrooms makes life a lot easier to just put my hand if freezer and get out just what I need and no waste.

Somtimes when I get the urge to nibble I will take some out of the freezer to nibble on. Makes a handy snack and its free
