I know there's a recipe in one of my old magazines. I'll have a rake through them and see if I can find it.

Well I couldn't find the one from the magazine, which is frustrating as I can picture it and I've made it! But did find this.

1 onion, chopped
2 level tbsp curry paste
14oz can chopped tomatoes
1/4 pint water
4 eggs, hard boiled, peeled and halved
2 tbsp very low fat natural yoghurt
1 tbsp lemon juice

Fry onion in frylight. Stir in curry paste and cook for 2-3 mins. Add tomatoes and water and simmer for 10 minutes. Stir in eggs and cook for further 2-3 mins. Stir in yoghurt and lemon juice just before serving. Serves 2.

Syns will depend on the type of curry paste you choose.

thank you, made this last week and it was lovely.

had it cold the next day, probably not to everyones taste but, I love cold curry
