Well I couldn't find the one from the magazine, which is frustrating as I can picture it and I've made it! But did find this.
1 onion, chopped
2 level tbsp curry paste
14oz can chopped tomatoes
1/4 pint water
4 eggs, hard boiled, peeled and halved
2 tbsp very low fat natural yoghurt
1 tbsp lemon juice
Fry onion in frylight. Stir in curry paste and cook for 2-3 mins. Add tomatoes and water and simmer for 10 minutes. Stir in eggs and cook for further 2-3 mins. Stir in yoghurt and lemon juice just before serving. Serves 2.
Syns will depend on the type of curry paste you choose.
