Puddings Help! Need some pudding ideas!

Hi all, i was wondering if anyone has any low ish syn pudding ideas/recipes?
Ive got the roulade one but getting fed up of doing it! I need my sweet fix and getting fed up of munching on a curly wurly!
Any recipies would be much appreciated.

How about any fresh fruit served with: sugar free jelly (1/2 syn), rice pudding (free on Green/EE) or porridge pancakes (1 HEB) to name but a few. I'll have a think and see if I can come up with any others.
 
If you have a search through the recipe forums there are loads of scan bran or weetabix based cakes. xx
 
Hi What about eat a cake a day!
Count 1xHEB for the whole cake

4 Scan bran (crushed)
1 Banana (crushed
1 apple (crushed)
1 weetabix (crushed)
2 tbsp Sweetener
2 eggs (beaten)
1/2 tsp mixed spice
1/2 tsp cinnamon

Mix it all together, put in a lined loaf tin sprayed with fry light
Bake for 30-40 minutes at 190c

I got this recipe from class probably have to count some syns for cooking fruit!

Nice recipe on here for Cheesecake using an Alpen Bar and Quark. :)
 
1/2 Syn Fruit Roulade!!

I found this on the puddings section on Friday, made it & it was GORGEOUS so I thought I would bump it to here - I can't find the original thread. I actually added a choc options sachet to the mixture to make a chocolate roulade but it was still only 2.5 for the whole cake (which is massive by the way)

FRUIT ROULADE - 0.5 SYN FOR THE WHOLE CAKE

a lady from my group made this roulade and fetched it in it was gorgeous.

1 TUB QUARK
4 EGGS
1 TSP BAKING POWDER
4 TBSP SWEETNER (I ADDED LOT MORE LOL)
VANILLA ESSENCE (OR ANY)
FRESH FRUIT

SEPERATE THE EGGS

ADD THE YOLK, HALF THE QUARK,
BAKING POWDER, SWEETNER AND ESSENCE INTO A BOWL, WHISK TOGETHER AND SET ASIDE.

WHISK EGG WHITE TILL STIFF. WHISK HALF INTO THE MIXTURE THEN FOLD IN OTHER HALF.

USING A SWISS ROLL TIN SPRAY WITH FRY LIGHT ( I PUT GREASPROOF PAPER IN FIRST THE SPRAY SO DOESNT STICK) POUR THE MIXTURE IN AND BAKE AT
180 FOR 15 - 20 MINUTES. LEAVE TO COOL

IN A DISH ADD REMAINING QUARK ,SWEETNER, AND ESSENCE AND MIX TOGETHER.

REMOVE THE CAKE FROM TIN WHEN COOL SPREAD THE QUARK EVENLY, ADD FINELY CHOPPED FRUIT (STRAWBERRY AND BANANA MY FAVE). ROLL THE CAKE FROM ONE END. SLICE TO SERVE.

THE WHOLE CAKE IS ONLY HALF A SYN AND THATS THE BAKING POWDER. CAN ALSO ADD CHOC OPTIONS SACHET FOR FLAVOURING. WHEN THE CAKE COMES OUT OF THE OVEN IT WILL HAVE RISEN LOADS BUT WILL GO VERY FLAT WHEN COOL LOL I THOUGHT IT HAD GONE WRONG FIRST TIME I MADE IT BUT WAS LOVELY.

Ginger Cake – Syn Free

Spicy Scan Bran Ginger Cake
(OK, I can hear the moans!!!)



5 Scan Bran or Oat Bran (from SW, some H&B or Waitrose)
2 large carrots (about 150 gms) finely grated or wizzed in a mini chopper
7 tbsp low calorie sweetener
3 eggs, beaten
3 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground nutmeg (or 1 tsp ground all-spice)



Method
1. Pour boiling water over the Scan Bran, leave for 1 minute then drain and mash
2. Mix the Scan Bran, carrot, sweetener and spices, stirring very thoroughly
3. Add the beaten eggs, and stir until completely mixed
4. Tip the mixture into a microwaveable dish – we've now 'standardised' on a Sainsbury's Basics 1litre container, which is approx 18 ½ cm x 13 ½ cm by 5cm deep, and gives excellent results
5. Microwave on high for about 12 minutes – it should shrink a bit from the sides


That's it – quick and easy and tasty too!
 
QUICK BREAD PUDDING ( 1 HEXB, some HEXA & 0 SYNS)

To make 2 ramekins (and you can eat both :) ) or 1 bowlful

INGREDIENTS
2 slices wholemeal bread from a 400g loaf
Cinnamon
Splenda
FryLight
1 tsp Vanilla Essence
60ml SS milk
60ml water
( add 14g sultanas for 2 syns)

Chop the bread into cubes and place in a small bowl

Sprinkle cinnamon lightly over the top to colour

Sprinkle sweetener over the top lightly

Spray with frylight

In a jug measure up 60ml SS Milk and 60ml Water and add 1 tsp vanilla and stir.

Pour slowly over the bread mixture

Microwave for 4 mins

Spoon into ramekins and eat both!!!


For the kids I mixed in one of those lunchbox sultana and apple boxes and used brown sugar
