Help! Vegetarian Main Recipe Required.

Hi All,
I have been stalking the pages of this site for many, many months and seeing all the achievements people have made about 5 weeks ago I decided to climb back on the SW bandwagon again after 3 years of choas in my life and falling by the wayside ( in the last 14months I moved from London to Edinburgh, found work and got married) My Hubby is supporting me to the hilt and has joined me in the SW way of life. Our weigh in this morning has seen me lose 10lb since the start and my Hubby 8lbs :party0049:

However I plea for help, my Hubby's great niece is a vegetarian and I got a message from her last night saying she was free this Friday and her family to come over for a meal ( always say she is more than welcome to come to eat) she is such a darling and always says it would be to much trouble for me as my family are huge meat eaters ( only she is the vegetarian in her family). So I would love to make something extra special for her the SW way. Things to be aware of she doesn't like mushrooms.

There's a sweet potato and spinach Thai curry on here somewhere which I've had an is lovely!!

You can pretty much make anything the same as what your eating with quorn stuff which is really low syns/free

Oh yes, a curry night sounds fab! Why don't you, hubby and niece all eat the same and make a low syn banquet of....

veg curries
pea pilau
Bombay bhajis
onion bhajis
chickpea dhal loaf
dips and chutneys
