Help with what spice to add to my chicken dish?

I've got in the slow cooker, chicken thighs, tin of tomatoes, courgette, onion, mushrooms, 1 red & 1 green pepper & 2 gloves garlic, leftover gammon.

What spice/herbs would be best to add to it? I just don't want to mess it up. Also should all the veg/chicken be covered? i.e should i add some stock?

I have those Schwartz no added salt chicken spices in jars - i sprinkle one of these on. They do a BBQ one too :) lovely xxx

Oh and you might be okay cos the chicken will have juices - but adding stock will give it a different flavour! x
I'd just add basil and oregano to give it a mediterranean flavour. not sure about if you need to add more stock as I don't have a slow cooker.
I wouldnt bother with stock, as you will have the juice from the tinned tomatoes and what is released from the meat/veggies.

I would just add a little splash of some balsamic vinegar and some thyme.

It may need some seasoning with salt and black pepper too if needed.
