Honey Roast Swede Soup.


1 swede-peeled+diced
4 carrots-peeled+diced
1 onion-chopped
4 veg stock cubes
1-2 tblspn honey.

1.Put diced swede in a large roasting dish spray with 1 lot of ww oil sprayer.
2.Cook swede in oven for ½hr.
3.In a large pan add the carrot,onion and veg stock with 4 pints water,bring to boil and simmer.
4.Add the honey to the swede and cook for a further 10mins.
5.Add the swede to the pan of veg and cook till soft.
6.Blend till desired consistency and season to your taste.

The only points in the soup are from the honey so depending on how much you add adjust the points accordingly.
I always estimate ½point per bowl full.:)

That sounds lovely. One question though. Can you roast the carrot, onion (and ok so theres no garlic but I put it in everything so there would be in mine lol)?? and then add to stock and continue that way? x
