honeyed lemon and ginger chicken

This is my recipe for lemon chicken. The kids love it. We eat it with either rice/salad or as a stir fry.

4 chicken breasts
2tbsp of honey
1 tbsp of lemon juice(or juice of 1 lemon)
1tbsp of lime juice (or juice of 1 lime)
1 tsp of mustard
1 tsp ginger
1 tsp cumin seeds
1/2 tsp of fennel seeds.
(a few grinds of the lemon,garlic, pepper grinder if you have this)

Mix all the above together in an oven dish. place the chicken breasts into the mixture and ensure they are covered well with the mixture.

Place in the oven on 150 and keep basting the chicken with the juice as it cooks.

This is a very tangy citrussy flavour.

mmmmmm - sounds fab! is it fresh ginger you use?

no not fresh ginger Im afraid but theres no reason why you cant use fresh I just have the jar of ground ginger in for ease.

just wondered how long you put in the oven for?

I'm going to try it with fresh ginger so I'll let you know how I get on.

Its just the honey you need to syn. 2.5 syns per tbsp. but divided up between each person its not bad at all.
It takes about 1/2 hour to cook.
