Hellooo!

So I just ate the most lushous dinner today!

Satay chicken (6 Syns), jacket pot (HexB) and peas YUM!! (FREE ON RED)

So I am here to share the recipe :)

This is to serve 2 people.
Ingredients
[FONT=&quot]For the chicken[/FONT] (marinade) (FREE ON RED)
30 ml oz fat-free natural yoghurt
1/2 lime, juice only
1 garlic cloves, crushed
Ground ginger
1 tsp ground coriander
half tsp ground cumin
Half tsp cinnamon
Half tsp ground turmeric

salt and freshly ground black pepper
chicken breast, cut into cubes

[FONT=&quot]For the satay sauce[/FONT]
1 garlic clove, peeled, crushed and lightly fried
2 level TBSN crunchy peanut butter 8 Syns (4 syns per person)
2 tbsp tomato ketchup 2 Syns (1 syn per person)
1 tbsp dark soy sauce
Chopped Chillis chilli sauce
2 tbsn sweetner
60 ml milk


Method:

Cut the chicken into bit size pieces. Mix the yogurt and all other ingredients for the marinade together in a bowl. Mix in the chicken, cover and leave in the fridge for 2 hours. When marinated, put on skewers and put on baking tray in the oven until chicken is cooked through and nice and crispy. (about 30 mins). Serve with the satay sauce (method to follow).


Put all of the ingredients for satay sauce, except the milk and water, into a pan and bring to boil. Add milk and simmer for a few mins until slightly thickened. Fry in another pan some green peppers and onions, then add to the sauce. Spoon over your cooked chicken skewers


LUSHHH!!! You have to try it its honestly lovely! only 6 syns aswell :)


Also, I made a lovely carrot cake and some syn free lemon curd!

[FONT=&quot]Lemon Curd [/FONT][FONT=&quot](SYN FREE on all plans!)[/FONT][FONT=&quot]

[FONT=&quot]Ingredients:[/FONT]
[FONT=&quot]3 tbsp of canderel
grated rind and juice of 1 lemon
2 large eggs
2oz very low fat fromage frais

Method:[/FONT]
[FONT=&quot]Whisk lemon juice and eggs together,add rind and sweeetner, place in bowl over saucepan of simmering water, stir until thickened.
Remove from heat and whisk in fromage frais until smooth.
Pour into a jar and keep cool.[/FONT]

[FONT=&quot][/FONT]
[FONT=&quot]Carrot Cake (12 and half syns or can be eaten as 7 syns plus one HexB :) )[/FONT]
[FONT=Arial, Helvetica, sans-serif][FONT=Arial, Helvetica, sans-serif]Ingredients:[/FONT][/FONT]
[FONT=Arial, Helvetica, sans-serif][FONT=Arial, Helvetica, sans-serif]4 Scan Bran (crushed)
5oz carrot (grated)
1 tsp cinnamon
1 tbsp runny honey
3 eggs (beaten)
1 weetabix (crushed)
½ tsp mixed spice
1 tsp nutmeg
2 tbsp mincemeat[/FONT][/FONT]
Method:
1. Preheat oven to 180C/350F/Gas Mark 4.
2. Place all the ingredients into a large bowl and mix well.
3. Turn the mixture into a lined tin, cover with foil and cook for 30 minutes. Remove foil and cook for a further 30 minutes. 4. Turn out onto a wire rack to cool.


[FONT=Arial, Helvetica, sans-serif]soooo yummy!! I enjoyed a slice of this cake for pudding, topped with some syn free lemon curd and strawberrys, lovely!!![/FONT]
