You could make a lovely lemon cheesecake with it! Just whisk it up with some lemon juice, little bit of grated lemon rind, and sweetener, then smooth it over your chosen base and stick it in the fridge to chill. You could crush up a couple of alpen light choc orange cereal bars for the base, or use a mix of muesli and relatively low cal gingernut biscuits or reduced fat digestives.
