I made the impossible: an easy, delicious and filling salad.

Yes, all at once :)

I came up with it yesterday and was so pleased with it that I made it today again.

I put:

Tuna
Chick peas
Kidney Beans
Borlotti Beans
Sweetcorn
Orange Pepper
Cherry Tomatoes
Red Onion

Dressing was:

Olive oil, chives, balsamic vinegar, salt, lots of lemon juice and basil.

Really fantastic, I'm usually not crazy about tuna but it really works with this.

Lots of protein and veggies, yummy.


Anyone out there accomplished a similar achievement? :D I'm dying to try it if so.

I'm glad you enjoyed it, feel like making it again as I have plenty of veggies that need to be eaten. Great excuse for making delicious food :)

I missed out the Borlotti Beans as I didn't have any in. Also the dressing was just balsamic vingegar but it really was lovely !
