Puddings Lemon and Syrup Cous Cous Cake

Hi all, very old SW member (have joined a few times over the last few years) but very new to this site. I thought I would share my newest creation with you:

5oz cous cous
2 lemons - rind and juice
4 tbsp golden syrup
2 eggs

Prepare the cous cous in the usual way, set aside. Mix the syrup, lemon rind and juice together and beat the eggs, mix it all together and shove in a loaf tin and in the oven for 30 mins. When cooled a little slice it in 1/8ths and its 1 syn per slice.

If you put a teaspoon of baking powder in it, the cake comes out fluffier and lighter x
