You can put this is a sweet pastry case and syn it, without the pastry case it is syn free!! I love this - with some Muller Light yogurt over...


  • 4 eggs
  • sweetner to taste
  • Grated zest of 2/3 lemons
  • Juice of 3 lemons
  • 250g Total 0% yogurt
  • 1 sweet pastry shop-bought flan case
Method

Preheat oven to about 200
°C (fan assisted) and warm through for about 10 mins

Meanwhile, make the lemon filling. Whisk the eggs, sugar and lemon zest in a large bowl until smooth. Stir in the lemon juice, then add the Greek yogurt. Continue to whisk until all ingredients are thoroughly combined

Reduce the oven temperature to 180°C. Pour the filling into the hot pastry case (this will ensure the case is sealed). Bake for about 30 mins / check it's cooked.

Remove from oven and leave to cool and set for about an hour

Serve with Muller Light yogurt.....enjoy - I made one at 7am this morning minus the case though

I've done it the same this morning - just keep checking on it as it cooks!! I can't wait till I go home after work - mmmmm yum yum xx
