Lentil shepherds pie

I stole this recipe from my sister who is vegan. It is one of my favourites and is delicious!

Ingredients

Small onion (chopped into small pieces)
2 cloves of garlic (chopped into small pieces/crushed)
7oz red lentils
1 pint of vegetable stock
2 tomatoes (diced)
1tbsp of brown sauce or worcestershire sauce (both nice!)
2oz frozen peas

Method

Fry onion and garlic using frylight for 2-3 minutes
Add lentils and stock then bring to the boil and simmer rapidly for 10 mins
Stir in tomatoes and brown/worcestershire sauce and simmer gently for 2-3 mins
Add peas and season with salt and pepper
Spoon into an ovenproof dish and top with mashed potato (real or smash!)
Cook for 20-30 mins on gas 5

I had this for my dinner last night with broccoli and carrots. Yum! :)
