Green Day Lentil Soup

2 onions
4 garlic cloves
fry light
9oz red lentils
1 tbsp cumin
salt and freshly ground pepper

1. Finely chop the onions and crush the garlic. Heat a pan sprayed with fry light and fry the onions and garlic for 5 minutes until soft but not brown.

2. Add the lentils and cumin to the pan and stir to combine. Pour in 2pt stock, season well and bring to the boil. Reduce the heat and simmer for 1 hour skimming off any foam from the top and stirring occasionally. (if the soup gets too thick add a little more water).

yum I have just made this, really lovely and filling.

Plenty left over, some for tomorrow and some for freezing :D
