Red Days Low Syn BBQ

Hi guys

I am going to a BBQ on Saturday and as this will be my first week I want to be good (want to save the syns for Beer!)

So on a red day what low or no syn things could a stick on the barbie, i have a Morrisons, small sainsbury, small Tesco and a massive Asda within a fairly easy reach.
I didn't want to just stick with Quorn as thats a bit boring!!

Home made burgers with extra lean mince, Tesco light choices cumberland sausages (1 syn each), chicken fillets, chicken drumsticks (remove skin), salmon fillets, kebabs made with lamb/pork/chicken - the list is endless!!
 
Jaylou is right, BBQ on a red day is easy! We usually do homemade beefburgers, chicken kebabs, syn free sausages (either Joes or our local butcher does gluten free ones), chicken thighs (skin removed after cooking) or lean pork steaks. If you do a search in the recipe forum there is a great syn free BBQ sauce that's lovely for cooking with too. Lots of salad, maybe a hexb for some boiled new potatoes, excellent meal! Oh, and becks alcohol free beer is only 3 syns a bottle.

Brit Mum's bacon double cheeseburger & my spicy/sweet potato wedges

Tandoori chicken kebab with mint drizzle (makes 2 large kebabs)
Ingredients
For kebab:
2 chicken breasts
4 heaped tbsp fat free yoghurt
1 tsp dry red chilli
1 tsp salt
1 tsp grated ginger (or ground ginger if you want)
2 cloves garlic, crushed (or 1 tsp garlic powder)
4 tbsp tandoori masala spice mix (Tesco do a great really cheap one)

For Mint drizzle:
1 bunch mint
1 clove garlic, roughly chopped
5cm cucumber, peeled and cubed
150g fat free yogurt
Juice of half a lemon
Salt & pepper

Method:
1) Prepare mint drizzle:
Put all ingredients in a processor and whizz until blended. Chill until ready to serve.

2) Prepare chicken:
- Mix all ingredients except chicken in a bowl. Dice chicken into bite size picees, add to mix and coat well. Cover and leave
in fridge for 24h.
- When ready to cook thread onto skewer and barbecue away!

Spicy pork brochettes - Makes 2 large kebabs
Ingredients
1 red chilli, seeded and finely chopped
4 spring onions, finely chopped
250g extra lean pork mince (can use beef/lamb/chicken/turkey)
2 tbsp curry powder of your choice (I use ras-el hanout)
50g fat free yoghurt
zest and juice of one lime

- Put everything in a bowl, mix well, cover and leave in fridge for a few hours/overnight.
- When ready to cook thread onto skewer and barbecue away!

Wedges:
Chop about 3 sweet potatoes into wedges, spray with Fry Light, add plenty of salt and Cajun seasoning and bake in oven for 20-30 min until soft and starting to crisp up. You can make these in advance and warm them up to go with your BBQ just before you eat.
