Yep definintely sticking with points, have readapted to points fairly quickly not even missing my monster cookies too much!!

I have the Tescos Healthy Living low fat cheddwar which is really nice, the WW is pretty foul really, a good one for melting is Lerdamer Light 1.5 points per slice.

I dont think ive tried sweet pot! .... the look of them put me off trying them lol
 
Oh you definintely need to try sweet potatoes, just peel them and chop into chip shapes, put on a non stick tray spray with buttery frylight and roast for about 45mins to 1 hour - I like my quite well done and crispy.

You can roast them (really love with chilli oil - you get a sweet and sour thing going on).

Or mashed, lower carbs than potatoes, although the same points. Great as a base for soups and casseroles as well.
 
Watercress and stilton soup

Have made a few minor changes from the receipe book so this is my version

serves 4
points per serving 2.5

300g potatoes peeled and grated or chopped small
1 onion chopped
850 mls of water with 2 teaspoons of stock powder (veg or chicken would do)
1 bag watercress
50g stilton
Black pepper

1. heat saucepan with Frylight and cook onions for about 5-6 mins.

2. Add potatoes, water, stock, bring to a boil and then simmer for about 10 mins.

3. Add watercress, take off heat, once wilted add stilton broken into little bits, stir and allow to melt.

4. Let the soup go cold, then blend until smooth, re heat to serve or freeze in batches.

Just eating it now and its gorgeous!!

Everytime i look at your diary hun i get an idea for a dinner! I LOVE sweet potato so will most definately have to try those chips! Thanks!
