Meals for the week

I have just sat down and started planning my weeks food (shopping day tomorrow!)...
Monday... Salmon with garlic roasted new potatoes and mangetout
Tuesday...Beef stirfry
Wednesday...Spinach and ricotta pasta (from this months SW magazine, had it last weekend and was gorgeous and simple!)
Thursday... Chicken stuffed with light mozarella and wrapped in bacon.
Friday... Fully loaded potato skins ( make jacket potatoes, scoop out the insides and mix with quark and reduced fat matue cheddar and spring onions and then put back in the skins and put under the grill)

Friday is my favourite meal, save the best to the end!
