    Melanzanne Alla Parmigiana
    This recipe is from the Slimming World Calendar & on January page :)

    Syns per serving: Syn free on all plans if using the mozzarella as a healthy extra A choice
    Super simple to make
    Serves 4
    Ready in about one hour

    4 garlic cloves, thinly sliced
    2 x 400g cans chopped tomatoes
    1 tsp cinnamon
    2 tsp dried oregano
    1/2 tsp dried chilli flakes
    1/4 tsp sweetener
    2 handfuls of fresh basil, finely shredded
    salt & pepper
    3 aubergines, thinly sliced lengthways
    6oz/170g mozzarella cheese, sliced

    Preheat your oven to 160 degrees/gas mark 3. Spray a large frying pan with fry light & gently stir fry the garlic for 1-2 minutes. Add the tomatoes, cinnamon, oregano, chilli flakes & sweetener & simmer for 15 minutes until thickened. Stir in the basil and season well.
    Spray the aubergine slices with fry light. Season & griddle in a non stick pan in batches, turning a few times until tender.
    Place half of the tomato sauce in the bottom of a medium ovenproof dish. Cover with a layer of aubergine and mozzarella. Repeat, ending with a layer of mozzarella. Bake for 35-40 minute or until golden & bubbling.
