Also, look here. You can look at recipes for each phase. There's loads. They are in American measurements though but I bought a set of cup measures from Tesco and they weren't expensive.

Sona, I make my cheese sauce the same way. Sometimes I add a bit of wholegrain mustard too. Yum!
