Meringues are in the oven, now what to do with the yokes?

doing Meringues from the last magazine, feeling like a right little Delia Smith! bet Delia has some one to do the washing up though,:)

anyway, have lots of egg yokes left over, any ideas how to use them up?

all my google searches comes up with naughty sounding things.

SYN free lemon curd?

I freeze mine and use when I need them in caked or omelettes to make them richer.
You can freeze in an ice cube tray when you need them.
They are also nice in a consomme soup or thin chicken soup when cooked.

LEMON CURD (ICECREAM) SYN FREE

INGREDIENTS
6 Eggs
9 Tblsp Splenda
3 Lemons, juice and grated rind
6oz 0% Fat Greek Yogurt

Whisk eggs and lemon juice together
Whisk in splenda and lemon rind

Continue whisking over a Bain Marie making sure water does not touch the bottom of the pan. Whisk until thick
Remove from Bain Marie and whisk in Greek Yogurt.

Pour into a prepared jar and chill. Use as lemon curd or:-


Once cold pour into Icecream maker

Takes 30 minutes

Serves 2

LEMON MERINGUE PIE ICECREAM (6 SYNS total minimum)

Put crushed digestive (3.5 each) and crushed meringue nest (13g = 2.5 each) into icecream maker followed by the lemon curd (as above) .

Takes 30 mins

Serves 2

Great thanks! I had a big jam making phase last summer and have been hoarding jars ever since, finally got something to fill them with.
