MiM's & flaxseed recipes

As the MiM's are a favourite of us Atkinsers.. I thought perhaps a thread with all of the recipes for them together would be good as some of you have come up with some amazing sounding recipes & adaptations all stemming from the humble MiM.

Will post the original from the recipe thread (if anyone has it in UK measurements that'd be fab!!)

Muffin in a Minute

allowed on Induction (this is taken from an American site which is why the fibre is deducted)

Serving Size: 1

1/4 cup flax meal (8.09 total carbs, 7.6 fiber) which is 30 grams in weight
1/2 teaspoon baking powder (0.64 net carbs)
1 packet splenda packet (0.9 net carbs)
1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
1 large egg (0.6 net carbs)
1 teaspoon butter

(total carbs is 12.07, fiber is 8.8; net carbs is 3.27)

Put the dry ingredients in a coffee mug.


Then add the egg and the butter. Mix.

Microwave 1 minute (or more). Take out. slice, butter, eat.

im going to try it with cream cheese tomorow... see how i get on..
also gingt o search for a square plate to make a "bread" mim shape so
i can make a toasti! I used to love having toasties with mince and boiled egg in them! or cheese and onion! hmmmmmmmmm

'I'm just trying the recipes that you long-termers probably know - I've just made the muffin in a minute, left out the butter and added a bit more Splenda and some cocoa powder (which increases carbs a little) and it's fab!!'

'Just experimenting now with the muffin in a mug - left out the Splenda and cocoa and added some herbs then sliced it and toasted it, spread with a bit of butter while still hot - lovely!!
I guess the next step will be trying to turn it into garlic bread...'

1/4 cup flax (I guess it)
1 egg
baking powder
all purpose seasoning (from herb aisle - contains a bit of chilli, paprika etc)
Bit of extra water
I don't use butter or oil
I either bake it in the mug or tip onto aplate and flatten out to get a base for a pizza, or I toast it.

MIM Toasted Cheese Sandwich
This is amazing.

I bought some toaster 'pockets' in the Pound Shop. Never used them before!

I made MIM mixture with a little salt instead of sweetener/flavouring and spread it out in as close to a 'slice of bread' shape as I could get. I cooked it as normal in the microwave. When cool I carefully sliced it in half and filled with grated extra mature cheddar cheese. I then put it in the 'pocket' and popped it in my toaster.

Out came a wonderful toasted cheese sandwich. Not quite like one made with regular bread, of course, but close enough. This could be adapted to suit almost any filling!
Toasted cheese sandwich - a tip!

Make up the MIM basic mixture without sweetener or spices. You can add dried or chopped herbs if you like, and even garlic - whatever savoury flavouring you fancy. Add extra cream or water (or better still, both) to make the mix thinner than usual, so you can spread it easily.

Then take a square or rectangular lid from a tupperware-type microwaveable dish. Square is probably best. I use rectangular but I don't spread the mix edge to edge, I make a 'square' shape that fits my small toaster. They turn out a little thicker this way too, which is great.

Spread half of the MIM mixture on the top of the lid, and microwave as usual. When it is cooked turn the lid upside down and just 'pop' the 'slice of bread' onto your worktop or a plate. Repeat this process, letting the second slice cool.

There ya go! Two nice ready split slices of MIM bread to use in your regular toaster as normal toast, your Breville as a toastie maker, or for slipping into a toaster pocket, ready filled.

Hiya all, im not on atkins diet yet but just for info I wanted to know what is a "mim"?? and where would i be able to buy it from?? what does it look like??

Im planning to join, your crew very soon....:cross: just need to lose a lil bit more on CD for a holiday in three weeks time.

A MIM (Muffin in a Minute) is a low-carb, high -fiber, Induction-friendly delight that you can microwave in a coffee cup.
Note: All of these recipes use flaxmeal, which is ground flaxseed. If you can't find flaxmeal, buy flax seeds and grind them in a coffee grinder. Milled flaxseed is the same as flaxmeal. In the UK and elsewhere, flaxseed is often known as linseed. Golden flaxmeal is sweeter and lighter than dark-brown flaxmeal, which has a nuttier taste

Serving Size: 1

1/4 cup flax meal (8.09 total carbs, 7.6 fiber)
1/2 teaspoon baking powder (0.64 net carbs)
1 packet Splenda® packet (0.9 net carbs)

  • Your MIM can be toasted once it's cooked and topped with cream cheese if you like.
  • Be sure to use baking powder, not baking soda. Aluminum-free baking powder tastes better. Be sure the baking powder is fresh.
  • Feel free to replace the cinnamon with other spices or add sugar-free syrup.
  • Add a tablespoon of sour cream for a moister MIM.
  • Change the shape of your MIM by making it in a bowl.
  • Try replacing the cinnamon with 1/2 tsp of unsweetened cocoa (net carb count will be higher).
  • Make a sandwich MIM by by adding parmesan cheese, garlic powder and some salt and omitting the cinnamon and Splenda®. Use a square-bottomed bowl, then slice and put in the toaster to use as bread for sandwiches and burgers.
Fine for Induction; you can count the pumpkin net carbs as veggie carbs

5 tablespoons flax meal
1/2 teaspoon baking powder
1 oz softened cream cheese
1 egg
1/2 teaspoon cinnamon
1/4 cup pumpkin (canned pumpkin with no sugar added; do not use pumpkin pie filling)
Splenda® to taste

Mix the dry ingredients together and then blend in the wet. Pour into a sprayed bowl and microwave for approx 3 minutes. The amount of time in the microwave depends on the kind of bowl you use. This is a big muffin.

1/4 cup flaxmeal (I used standard, not golden)
1/2 tsp. baking powder
4 grinds of sea salt (maybe same as 4 shakes table salt)
5 shakes dry dill (maybe 1/8 tsp.)
1 TBS + a pinch more GARLIC INFUSED olive oil (see below for info) or use 1/8 tsp. garlic powder
1 TBS Cotija cheese (or any other dry, powdery white cheese; like parm)
1 egg

Put all dry ingredients into a cup (or bowl). Stir with fork or spoon to mix ingredients. Add oil with many bits of garlic (or garlic powder). Add egg and mix together thoroughly with fork or spoon.

Microwave 1 minute 20 seconds.

Put a good layer of sour cream on top (about the thickness of a cream cheese spread, not over thick unless you love sour cream).

If making into a sandwich, let cool then slice lengthwise into two slices of "bread". Toast lightly and use for an egg breakfast sandwich or try as a grilled cheese. Good for a hamburger bun or for making a cold sandwich.

In a pyrex/anchor custard cup:

Beat 1 egg
1/2 tsp melted butter
1/4 tsp baking powder
1/4 cup flaxmeal (ground flaxseeds)

Stir until smooth, then add 1oz of sharp cheddar cheese (or whatever flavor)

Bake 325 F for 15-17 minutes.

MIM recipe for quick Bread Slices or Hamburger Buns
1/4 cup flax meal
1/2 teaspoon baking powder
1/2 teaspoon Splenda®
1 egg
2 teaspoons heavy cream
1 1/2 teaspoon softened butter(add more if you want a stronger butter flavor)

Optional: Add garlic, onion, parmesan, salt, etc. to kick up the flavor. be sure to add in the extra carbs

Mix well, let mixture sit for 3 minutes
Microwave on high for 1:20
For bread slices, microwave in a square dish
For buns, microwave in a round dish/bowl
Slice in half and toast in toaster
Could also toast in a pan with butter for grilled cheese

about 2 net carbs

Rich Cocoa MiM1/4 c flaxseed meal
1/2 tsp. baking powder
1 tbs. unsweetened cocoa
1 large egg
2 tsp butter
2 or 3 packets sweetener
2 tsp heavy cream

Mix dry ingredients in large rounded coffee cup.
Add egg, cream and butter. Stir well and microwave on high for one minute
Invert cup onto serving dish. Slice and eat with chilled heavy whipping cream.
About 4 or 5 net carbs.

Doughnut/Bagel/ Bundt cake MiM variations
Choose a shallow cereal bowl instead of a coffee cup.
Mix your MIM batter as usual in the bowl.
Scrape the batter away from the center of the bowl and place an empty, lidless, GLASS spice jar (don't use anything plastic) in the center of the bowl. Make sure the open end of the jar is pointing up.
Microwave your MIM as usual, then toast it, butter it, melt cheese onto it, fill the hole with blueberries if you're in OWL or beyond, etc.

Coconut MiM
1/4 cup flaxseed meal
1 packet sweetener
1/2 tsp baking powder
1/4 tsp ground ginger
2 tbs cream
1tbs coconut oil unrefined
1 large egg

Mix all ingredients as for regular MIM and microwave 1 minute 25 seconds.
Serve with cream cheese or butter.

Flaxseed Pancakes
Makes about 6 pancakes.
3/4 cup flax meal (24.27 total carbs, 22.8 fiber; 1.47 net carbs)
1/4 teaspoon baking soda (0 net carbs)
1/4 teaspoon baking powder (.319 total carbs, .0023 fiber; .3167 net carbs)
1/4 teaspoon salt (0 net carbs)
3 packets Splenda® packet (2.7 net carbs)
1 egg (.61 net carbs)
1/4 cup heavy cream (1.66 net carbs)
1/3 cup water
1/2 teaspoon vanilla (.266 net carbs)

Mix dry ingredients together and mix well.
Add cream, water, egg, and vanilla.
Mix well. Add more water if batter is too thick.

Spoon on greased hot griddle.
Cook on low temperature until almost cooked all the way on one side, then flip to brown the other side. Takes longer to cook than regular pancakes and will burn if the heat is too high.
try adding blueberries if you're on the berry rung of OWL.

  • For entire recipe, 29.825 total carbs, 22.80 fiber for 7.02 net carbs for entire recipe (without fruit).
  • If you get 6 pancakes, it's 1.17 net carbs per pancake.
  • When doubling the recipe, 3 Splenda® packets is fine.
  • These can be baked in the oven (325 or 350 for about 20 minutes or until cooked through) rather than on top of the stove.
  • They can be made into muffins if you double the recipe.
  • You can double the recipe (except for the Splenda®) and add 1 cup frozen unsweetened blueberries (18.86 total carbs and 4.18 fiber; 14.68 net carbs), bringing the total net carb count for the recipe to 26.03 and 2.17 net carbs per pancake.
  • Obviously, if you get more or less pancakes, your net carb count per pancake will change
Single Flaxmeal Pancake

2 eggs beaten
2 tbsp flaxmeal
1/4 tsp baking powder
Splenda to taste

Cook in frying pan or griddle same as you would a regular pancake. Tastes wonderful topped with butter

Fab thread - I've long been a fan of the humble MIM - will try the toasted cheese sarnie in the toaster pockets and also the pancakes.

One question - I used to buy the flax meal from Tesco in a largeish red & green bag for about £4.30. They only sell smaller bags now in a silver wrapper containing darker flax for around £1.60, made by Prewetts (175g). I preferred the lighter mix - where does everyone else find their flax seed?
Try Julian Graves, found on most High Streets, or Holland and Barratt, for ready ground flaxmeal or the seeds to grind at home. They do both golden and brown linseed (flax).

I bought a KRUPS coffee/nut/spice grinder postage free on AMAZON for £19. What an investment! I can now buy the linseed and grind it fresh at home. This grinder produces flaxmeal in seconds! Within one month or much less the grinder will have paid for itself, because of how much I am saving.

I buy golden linseed in 150g bags from ASDA Online, they only cost £1 each! A real bargain. Tesco do bags of the brown linseed, they cost a little bit more but still cheaper than ready ground.

You can buy ground linseed from Amazon but the postage costs are very high, so it is not worth it, really. However I have bought this on Amazon rather than run out.

Once you get into MIMs you enter a whole new world of Atkins. You won't miss regular bread at all because the MIM is so adaptable. When I tried the rich cocoa one I fell THUD in love with the MIM, forever! Ha Ha.

You can add sugar free syrups or cake flavourings to cream cheese, with a little sweetener. This makes a fab 'frosting' to put in the centre or on top. Bliss!

Hey guys quick question!

the linseed that you buy does it matter what colour it is?
Ive seen really bright golden linseed and brownish linseed..

I actually found a 400g bag of linseend for 75p in my local asian shops! they were the East End brand! I took it home.. grinded it and tried it.. its bakes in the microwave just like the other flaxseed but im sure its diffrent.

anyway i got alot more out of it that the 4.99 i pay for flaxseed from holland and barratets! Just gona test it tho to make sure i dont pile any any weight due to it! It didnt really have any nutrition info..
Wow Sona! I wish I had an Asian shop nearby... That is pretty much unbeatable! The golden linseed is usually a bit more expensive than the brown. It has a lighter taste as well as lighter colour. Some don't like the nuttier taste of the brown linseed but I love it. They are the same carb-wise.
GirliGirl- hun u probs DO have an asian shop nearby! go to your local mosque and look left then right.. You will probs spot a shop from there! lolz Anyone that stocks East End brand will probs have linseed. I made a chocolate mim today.. in the past ive added a little skinny cow choco powder but could never taste it so today i made one with a bit more and it tastes LUSH! hmmm

My home grinded flaxseed (linseed) is a bit finer than the bought stuff so i have to use more.. I find that i can have 4 tablespoons of flaxseed, 1 egg, 1 spoon of splenda and 2 teaspoons of water will make me a nice big muffin... cut in half and you have a big thick balm.. or slice in to little pieces and a nibble snack for the rest of the day.

Fave flavour is rich chocolate. Made with cocoa powder. I just cannot get enough of these so have severely rationed my intake. I spread mine with sweetened and flavoured cream cheese. Utter muffin bliss.

I also love the toasted cheese sandwich version, but chocolate WINS!

Oh I bought some unsweetened frozen ginger. Will blitz some in my food processor and make a real ginger MIM.

Obvious but yummy. Could be used for sausage sarnies or indeed any sandwich.

The MIM pre-shaped and cooked 'bread' slices (microwaved on a container lid) can be used for so many meals! I don't eat meat and I tell you, a fried egg or veggie sausage (or veggie ham etc) sandwich topped with a little mayo or even low sugar ketchup really hits the spot!

Today when grinding up flaxmeal for MIMs and sandwich bread I had a flash of inspiration. I added one quarter-cup of ground almonds to three quarter-cups of ground flaxseed, shook it all up and put it in a sealed container in the fridge.

I then did the same with a quarter-cup of ground mixed nuts. The difference in taste and texture of the cooked MIM afterwards made a nice change. I will make a 50/50 mixture next time for occasional use!

This might not be suitable for Induction but if the meal with the added nuts is used now and then it shouldn't hurt at all. Yum.
