Hello lovely, it's dead easy to make! Made day before and kept in fridge It's potatoes steamed,mashed left cold. Mix a chopped up spring onion, egg, seasoning basil. When potato cold ,mix egg mixture into it. Meanwhile make roasted red pepper,onion,tomato and balsamic sauce - I didn't have any peppers so chucked in mushrooms and added chilli n spinach. Store in fridge.
Next day heat oven 200, put sauce in pan to heat. Roll small bits potato into balls & spray with frylite, bake for 25 mins. Serve on sauce and top with cheese. I made the fatal mistake of chucking the sauce over the gnocchi and baking a bit longer - the potato became soft again on the edges :( but I also added chopped quorn sausages and loved it so all is not lost! Xx

Awww thanks Molly :) I love looking at the other food diaries and recipes on here for inspiration. Helps to not get stuck in a food rut when you see all the gorgeous food! Good luck to you on SW and hope to see some creations from you soon ;) xx

Hi Minky, I've just subscribed to your diary after having read the last couple of weeks, had to laugh at the doughnut on Friday.... But am very impressed at your exercise diary also....I must try and up my exercise. Am just about to get ready and go off to the gym, only discovered... Or should I say was brave enough to try the rowing machine yesterday for the first time and really enjoyed it.... Will give it another short go today and set myself a target.
Have also noticed that we are in other forums together... Through the stones and Saturday weigh in.

Hiya spangle! I need to up my exercise too really - main one for me is my walk to work and back and I was doing the 30 day shred but level 2 was all planks and killed me! I am getting zumba for the wii at the end of the month so hoping to get that on daily or every other day.
Your brave with the gym - I couldn't handle all the gym bunnies in Lycra! I'm not confident that I wouldn't die in there either :D although when I used to go years ago the rower and x trainer were my favs! Lemme know how you get on! Xx

I think I'm lucky with the gym that I'm using as it is a local authority one, so there are all types of people using it and I don't feel that it's too uncomfortable for the larger person.
I was chuffed with myself yesterday as I decided that I was going to do a distance of 10Km somehow, so managed 4.7Km on x trainer, 3 Km on rower and finished off with 2.3 Km on bike, then to finish it off did a couple of weights for my legs. I just about managed it out of the gym, my face resembled a beetroot.
Had good intentions of playing, or should I say hitting a shuttlecock about with OH today at the gym, but snow has put an end to everything and we are housebound, silly thing I hadn't brought across suitable clothing/ boots to go for a walk even, and haven't been able to get car out to even return home.

Carrots, onions, leek, swede, black pepper, chopped tomatoes, sweet paprika, cannellini beans. May stir in some baked beans or garden peas when I get home. Probably with mash or mini roasties (depends what OH can be bothered to cook as I have badminton)
Fry light roasties were made by OH - he can make them again!! Were bloody gorgeous!

Love your pictorial food diary.......great ideas and soooo tasty. I love SW as encourages you to cook more but also allows my favourite syn free standby tomato and onion pasta 'n' sauce. I am definitely eating more fruit and veg now too xxxxx
