Red Day Mock Mashed Potato - anyone tried this

Hiya

I'm planning a full red week and was looking for carb free potato/rice alternatives. I tried the cauliflower rice a while ago and it was surprisingly yummy! So I've found this recipe and I'm wondering could I substitute the sour cream for either Quark, 0% greek yoghurt or fromage frais to make it syn free? Has anyone tried this?? Heres the recipe:

Mock Mashed Potatoes
Recipe makes two servings.

2 cups cauliflower, finely chopped
1 tablespoon sour cream, or more to taste
1 tablespoon butter
Salt and pepper to taste

Directions:

Steam or microwave cauliflower until very soft.
Put cauliflower in blender or food processor with butter and sour cream, blend. Add salt and pepper to taste. Serve hot.

I'm trying it out this week so I'll let you know how it goes!

I would use squash too but I hate chopping the damn things!!

I also use BNS and celeriac as an alternative to potato. Celeriac chips are great!

Thanks for the tip britmum, will see what I can get my hands on at the shop! Kevandju5 what does celeriac taste like? I always think of celery when I see it and I hate celery so I've never tried it...!

Swede mash is yummy - I actually think it has more taste to it than potato :)

I too use butternut squash, dont chop it up tho! Slice in half and roast, then scoop out and season x
