Morrocan Quorn Stew

Morrocan Quorn Stew

Serves 4

Points per serving: 2 (8.5 for the whole recipe).


1 pack quorn pieces
2 onions finely sliced
57g dried apricots chopped
28g sultanas
1 tspn ground cumin
1 tspn ground coriander
1/2 tspn cinnamon
1 large tin chopped tomatoes
1 level tablespoon redcurrent jelly
1/4 pint vegetable stock
Freshly chopped coriander


Preheat oven to 150 degrees c/300f/gas 2

Place quorn, apricots, sultanas, onions in ovenproof dish

Mix together spices and sprinkle over quorn

Add tomatoes and stock and stir to combine

Cover dish and place in oven and cook for 45 mins, remove, stir in redcurrent jelly then return to ove n for another 40 mins

Chop coriander and stir through just before serving.

The original recipe used meat.

Mmmm that sounds nice - not a fan of quorn pieces though! Might try it with chicken!

aww i love quorn pieces! love anything quorn but the bacon.. :D
