Muhsroom Soup Recipe

I have one from the Christmas book:

Serves 4 (1.5 Syns per serving)

Frylight
2 onions, chopped
4 garlic cloves, crushed or sliced
1tsp chopped thyme
1tsp chopped rosemary
400g mixed mushrooms, thinly sliced
1.5l veg stock
Salt & pepper to taste
100ml sherry (optional, adjust Syns if not using)
2tsp chopped tarragon (decorative)
2tsp chopped parsley (decorative)
Fat free natural fromage frai to serve (optional)

- Spray pan and stir-fry onions,garlic, thyme & rosemary
-stir in mushrooms and cook on high heat for 2 mins
- Add stock and simmer for 15mins
- Season to taste
- Stir in sherry (if using)
- Blend until smooth
- garnish with tarragon, parsley & fromage frai

I would use the parsley in the soup maybe instead if the rosemary and thyme but that's because I use those two a lot!!
 
That sounds lush, thank you. I'm guessing syn fee if you don't put the sherry in so happy days!

Yup! Shockingly I don't keep sherry in the house, or ever bought it lol! But guess its to fancy it up for a Christmas recipe! :)
 
Is this quite a 'watery' soup once blended?
