My Low cal, SW meals & snack ideas

Cauliflower rice egg cups
Serves 6

  • 240g cauliflower rice (buy ready prepared or make it yourself)
  • 1 egg, whisked
  • 1/4 cup cheddar cheese
  • 1/8 cup grated Parmesan cheese
  • salt, to taste
  • Pepper, to taste
  • 1/4tsp garlic powder
  • 6 medium eggs
  1. Preheat oven to Gas 8. Lightly spray a 6 hole muffin tin with cooking spray, set aside.
  2. Put cauliflower rice in a bowl, add the whisked egg, cheddar & Parmesan, salt & garlic powder. Divide mix into each muffin hole and firmly press in to make a cup.
  3. Bake approx 15-20 mins or until cheese has melted & cups are golden & edges are browned. Remove from oven; crack the eggs into each cup, season with salt & pepper, return to oven & bake until the whites are set & yolks cooked to your liking (start checking at 10mins)
  4. Cool for 5 mins in tin then serve.

Each cup: Calories:88, Protein: 8g, Fibre: 1.2g, Carbs: 2.2g, Fat: 5.4g

Breakfast Pies
Makes 2
1 SW sausage (I got mine at Costco 0.5syns each)
1 bacon rasher.. All fat removed
200g baked beans
3-4 mushrooms
2-3 tomatoes, sliced
15g cheddar cheese (half HeA) grated
2 El Paso mini tortilla stand 'n' stuffs ( 2 syns each)
Low cal cooking spray

Spray pan and cook sausage, bacon and mushrooms. Add egg and cook to liking (either fry or scramble)
Heat beans in microwave.
Fill stand 'n' stuffs with the beans, top with sausage, bacon & mushrooms. Top with egg, then tomato slices. Sprinkle with cheese.
Bake in oven for 10 mins at Gas 6 until golden.

Pizza Pies
Makes 2

2 mini Old El Paso stand 'n' stuffs (2 syns each)
15g Cheddar Cheese, grated (half HeA)
Chopped Mushrooms, red onion, orange pepper
Chopped bacon
Tomato puree
Dried Italian mixed herbs
Low cal cooking spray

Cook bacon, mushrooms, onion & pepper in cooking spray.
Pile into the stand 'n' stuffs.
Spread tomato puree over and top with cheese, sprinkle over herbs.
Bake until golden & crisp, about 20 mins.
