:)Decided it would be helpful to have a go to place for recipes I like and for ones I find that I want to try, SW & LC

Breakfast: had the egg in a toast baskets (didn't put ham in as I'm veggie )with oven baked tomatoes, nice but a bit of a faff. Couldn't find the muffin tin so used a divided silicone cake tin (squashed the bread up too much!)
Nice & would make it again :)

I've just put a chicken casserole in slow cooker for the hubster....got him losing weight too! Chicken, Potato, Carrot, Swede, Leek, Onion, Tomato Puree, Worcs sauce, Nutmeg, Garlic, Mixed herbs, Black Pepper, 2x Oxo cubes, 250ml boiling water. On low for 6-8hrs.

I'm having the same as above but in my slow cooker I haven't got the chicken in, I'll be adding Quorn chicken later on.

Serving it with carrot & swede mash and sprouts

Lunch was Spanish Tomato Soup:) (recipe) followed by a mixed leaf salad.

So far when I've been sitting watching tv in the evenings I've wanted to munch on something, I need to get my head around the fact that instead of reaching for some chocolate I can have a savoury snack. ( I prefer having no chocolate in so I can't be tempted, but with having 3 grandkids popping in and out and knowing I have a "goodies box" I need to keep some in. I've decided best way to handle that is only buy treat size packs)
 
My fave savoury snacks Syn free
  • SW chips or wedges with seasonings on..I never par-boil, spray them, add seasoning & put on top shelf @ gas 7 until golden (about 25mins)
  • Carrot fries - use a bag of ready cut carrot batons, cook as above
  • Quorn tikka fillets (chilled section)
  • SW raita - vegetable crudités (or make to dip any of above in)
  • Quorn ham, tomatoes & cucumber
 
SYN free Houmous Dip.
Serves 2 EESP

1 red pepper - deseeded & sliced
Low calorie cooking spray
400g can chickpeas - drained & rinsed
20 - 50ml water
2 cloves Garlic - crushed
1tbsp lemon juice
Salt to taste

Put red pepper on baking tray, spray & roast until soft. Cool.
Put all ingredients into a food processor & blitz to a smooth paste. ( Add more water if needed)
Salt to taste & serve with speed crudités


Minted Houmous
1/4 bunch parsley
1/4 bunch mint
200g Houmous

Trim herbs, leaving a bit of stem on.
Put everything in food processor & whizz until smooth.
Serve in individual dinky mason jars with crudités

Herbed Houmous
2tsp ground cumin
2tbsp roughly chopped tarragon
2tbsp roughly chopped parsley
400g can chickpeas
1/4 lemon - zest end & juiced
20-50ml water

whizz chickpeas, water, cumin & lemon zest & juice in food processor.
Stir in herbs.
Season with salt & pepper

SW Vegetable Chilli (tweeked)
Serves 4. Freezes: up to 3mths

3 carrots
2 onions
1 red pepper
1 courgette
8 Tomatoes
Low fat cooking spray
500ml Passata
400g tin red kidney beans - drained & rinsed
Crushed chilli flakes, to taste
Handful fresh chopped coriander

  • Roughly chop all veg.
  • Put carrot, onion & chilli flakes in a pan. Spray & fry 5-6mins. Add pepper & courgette & continue frying for 5mins more, stirring.
  • Add tomatoes & passata, bring to boil then reduce heat & cover. Simmer 20 mins, stirring occasionally.
  • Add kidney beans, coriander & season with salt & pepper to taste.
  • Simmer for a further 10 mins.
  • Serve with cauliflower rice.
 
Mini Pizza with Smoked Salmon & Herbed Couscous

Preheat grill.
Spray a pitta bread with cooking spray, sprinkle with garlic granules (both sides)
Grill until charred ( 40 secs)
Spread Houmous over pitta & top with fresh spinach, sliced cucumber, radishes, onions & pieces of smoked salmon

I've been searching on here to see how other people use quark as never used it, here's what I've found:
  • mix quark with 28g grated cheese from HE A and lazy chilli put it on toast and grill it
  • mash it with tuna or cooked salmon for a quick pate for lunch.
  • mix a tub of quark with 2 sachets of white choc options, put it on top of 2 melted alpen lights to make a cheesecake and put in the fridge to chill.
  • Mix with marmite to spread on toast or crispbreads
  • mix about 25g cheese with 1 heaped tsp quark and it makes a lovely cheese spread to put on ryvitas etc.
 
Crushed Raspberry & Cherry Creams
Serves: 4
Cook time: Ready in about 30 minutes, plus 3-4 hours' setting time
Syns per serving: 1½

1 sachet of sugar-free raspberry jelly
25g fresh raspberries
110g canned cherries in fruit juice, drained
2 x 190g pots of Müllerlight cherry yogurts
8 level tbsp aerosol cream, to serve

1. Dissolve the jelly crystals in 200ml boiling water. Top with 150ml cold water and set aside to cool.
2. Lightly crush the raspberries with a fork and add to the jelly. Then add the cherries.
3. Divide the jelly mixture between 4 dessert glasses or tumblers and gently swirl the yogurt through it to create a marbled effect. Place in the fridge and chill for 3-4 hours, or until just set.
4. Serve each dessert topped with 2 level tbsp aerosol cream.
 
Breakfast Pies (makes 2)
2 syns each, half hexA

1 SW Sausage, chopped
1 rasher Bacon, chopped
200g baked beans
1 egg
3 Mushrooms, chopped
3 Tomatoes, chopped
15g Cheddar, grated
2 El Paso mini stand 'n' stuff flour tortillas

1. Fry sausage, bacon & egg in frylight
2. Crack egg in, stir in beans
3. Fill boats with mix, sprinkle with cheddar, top with tomatoes.
4. Cook at Gas 6 for 10mins

Rice Pudding
SYN Free

Cup of pudding rice
Nutmeg
Sweetener
Any free mullerlight
Vanilla essence

Boil pudding rice in water with a little nutmeg & vanilla essence & sweetener to taste.
When cooked stir in the yogurt.

Comment:
Food Heaven or Food Hell....Dave voted this Food Hell, says it's horrible and bitter with an after taste.
I used Canderel sweetener, is Stevia or anything else better? Also used a vanilla mullerlight.
If you've made this with better results please let me know how you made yours x

SYN Free Onion Gravy
3 Onions, sliced thinly
1tbsp Worcs Sauce
1/2 tsp English Mustard powder
2tsp sweetener
300ml hot chicken or vegetable stock
Low fat cooking spray

1. Spray hot frying pan & fry onions until softened.
2. Mix all other ingredients together & pour over the onions.
3. Bring to the boil, simmer for 10 mins until reduced by half
 
SYN free KFC chicken
(Got the recipe from sw_danielle)
1 chicken breast, cut into strips
1tsp garlic (though would double this next time)
1tsp oregano (used mixed herbs)
12tsp ground ginger
1tbsp paprika
1 egg, beaten
Black pepper
30g Wholemeal Breas (half HexB)
(Will add 1/2tsp cayenne pepper next time)

Whizz bread & spices in food processor to fine breadcrumbs.
Dip chicken in egg then dip in breadcrumbs to coat well.
Pre heat oven to Gas 6, 200deg C
Spray baking tray and bake for 15mins each side or until cooked through.

DIY cereal bars ... Made by Martha age 7

30g cereal
12g mini marshmallows

Get a piece of baking parchment ready to roll your bar before you start making them
(You have to work fast once they come out of microwave!)
Crush cereal in a micro safe bowl.
Add marshmallows (we found it best to mix them into the cereal a bit)
Put in microwave for approx 30secs (the marshmallows all puff up)
Remove and quickly stir the marshmallows into the cereal (a very sticky job!)
Put in middle of baking parchment and roll up like a sausage to help shape the bar.
Open the paper and let the cereal bar set.
Eat!

Our favourite cereals were:
Granola with raisin & nuts
Banana chip weetabix
Shreddies

Martha's real favourite was Frosties!
Rice Krispies didn't work very well, you'd have to add other things as didn,t have much taste.
Chocolate weetabix wasn't very nice either.

You could add dried fruit etc if you fancy.

... All in all, a definate hit with the kids to make and Martha thinks they are a good idea incase you didn't fancy breakfast but could take one for eating on the way up to school!
She also thinks she could sell them!! :D
 
Ruth's carrot, tomato & chilli soup....Devine!

Peel and slice carrots, chop 4 tomatoes and 1/2 a tin of passata, 1 tin baked beans, chicken stock cube, 1 pint water, 1 tsp Cumin, 1 tsp Oregano, 1/4 tsp Chilli Powder, 1/4 tsp Garlic Powder. Cook on hob for 5 minutes and blend until smooth. Serve.

( I used a tin of whole tomatoes as had no Passata, forgot to add the tomatoes (Ooops just realised that!), used vegetable stock cube.)

The beans give the soup a lovely taste.
Will defo make this again:p
 
SW Butternut Squash Soup... SYN free
Serves 4. Takes less than 30mins

Low cal cooking spray
1 onion, peeled & diced
1 med butternut squash, peeled deseeded & cut into wedges
1 small potato, peeled & quartered
2 garlic cloves, peeled & crushed
Salt, black pepper
900ml vegetable stock

Spray a large pan with cooking spray & place over low heat. Add onion & cook 2mins.
Add BNS & potato & cook for 2mins over medium heat. Add garlic & season to taste. Pour in stock & simmer for 25mins,.
Blend until smooth & serve sprinkled with thyme.
 
Breakfast Burritos.
Serves 4. Takes about 15mins

½ medium green pepper
1 onion
2 oz. ham, lean, reduced sodium
2 tsp unsalted butter
4 large eggs
½ cup low-fat cheddar cheese
dash black pepper
4 small whole wheat tortillas, about 70 calories each
¼ cup salsa

Chop pepper & onion finely. Chop ham. Set aside.
Melt butter in a non-stick frying pan over medium-low heat.
Whisk eggs with the pepper, onion and ham.
Pour the mixture into the pan and scramble until eggs are set to your liking.Sprinkle cheese over, season with black pepper.
Divide the egg mixture evenly, place it down middle of each tortilla; top each with 1 tablespoon of salsa
Roll tortilla up like a burrito & serve.

Serving size: 1 burrito
Calories: 220 Protein: 15.7g Fat: 8.9g Sat fat: 3.7g. Carbs : 25.3g Sugar: 2.7g
Fibre: 2.9g
