CARROT WITH A SMIDGEN OF CORIANDER SOUP
(free on any plan & packed with super free veg. and as I was on a red day I needed to think up a recipe which did not require potatoes.)
Little preparation is needed - don't worry about chopping stuff up - just bung it in.

Ingredients
500g Carrots, peeled and top & tailed
1 large onion, peeled & quartered
2 garlic cloves, peeled
Some Coriander
1 Knorr Vegetable stockpot
2 pints cold water
Salt & Pepper

Place all of the above in a large saucepan
Bring to the boil with the lid on
Remove lid & cook for about an hour

Liquidise & serve

Add more seasoning if needed and water if you prefer a thinner soup.

It's doing wonders for my sore throat :)

Found this while googling, made the sweetcorn soup and just had to sign up to say Magnifico!

Absolutely beautiful and will be eating this a lot.

I halved the recipe due to what was in my cupboards but still used two knorr chicken cubes. I also didnt sieve as the consistency seemed spot on after blending. I also added some chopped up cooked chicken a couple of minutes before serving.

I'll be looking for your other recipes!!!

Thanks

:thankyou: didn't know it could be googled - I feel all kinda important now lol.
We love this soup. I like to sift out the husk bits though - probably would create too much wind otherwise lol
