My Yummy Chicken Fricassee Recipe

    Thought I would share this recipe with you all. I'm not very good with working out syns but I think it is healthy :D
    It was absolutely gorgeous and I served it with cubed dry roasted potatoes.

    Chicken Fricassee

    Ingredients:

    Fry Light
    1 large chicken breast, cut into 10 smallish pieces
    ½ teaspoon salt
    Freshly ground black pepper (6 turns of the pepper mill)
    6 medium mushrooms
    1 tablespoon finely chopped garlic
    1/2 pint of chicken oxo cube
    Juice of 1 lemon
    4 tablespoons finely chopped parsley leaves

    Method:

    Heat a frying pan. Sprinkle the chicken with salt and pepper. Put the chicken in the pan in one layer and cook until browned, about 10 minutes. Add the mushrooms and cook for another 5 minutes. Add the garlic and stir, then add the stock and bring to a boil. Add the lemon juice. Simmer until chicken is cooked
    through.

    Sprinkle the chicken with parsley and cook for a further 5 minutes. Add more water if required.
    Take off the heat and stir in a 2 tablespoons of fromage fraisto make it creamy and then serve.
