NEW way to serve liver: RECIPE

Kebda Iskandarani (Alexandria style liver) (single serving)

125 gram lamb or beef liver, cubed

1/4 onion, finely sliced
1/2 bell pepper (optional) cubed or sliced
1/4 green hot pepper, finely sliced
3 cloves of garlic, crushed
1/4 tomato, finely diced
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
1/4 tsp vinegar
pinch of allspice


  • Saute onion and green pepper until onions are golden brown
  • Toss in the remaining ingredients and fry for 30 secs.
  • Add the liver and stir fry till done.
  • Remove and stir in the following:-
1/2 tsp lemon juice
12.5g finely chopped parsley
  • Serve warm with fresh pita bread.
 
You need to watch out for liver as it does contain quite a bit of carbs as thats where the animal stores its glycogen. Onions & peppers are at the higher end of the carby veggie range & no pitta bread!!

Apart from that sounds delish!! ;)
 
i dont like liver, unless its pate.... great recipe though if you watch the carbs x
 
oh thanks ladies for the feedback...

Yeah, I ended up only having 5 small cubes and a teaspoon of chopped veg....it was quite filling, plus one can take only so much liver!!!

overall, a nice dish for a change...
