Nikkiruth diary

Hi Sarah, Thanks for popping in, I’m afraid I’ve had a setback, on Thursday I was out putting my books out and my hip started to hurt, I decided I would finish off the road I was in and go back to the car for a rest, unfortunately I only made it to another 4 houses before I came to a complete halt, I could not move due to the pain. I had to ring my OH to come and get me, I could hardly get into the car, and I spent the rest of the day on the sofa.
I went to see my consultant on Monday and he says the bursitis has flared up again, so I need to rest, will try and get out the end of this week and see how I get on, I hope the steroid injection starts to work real soon!!!!
As you can guess I have not been following the plan for the last few days but I’m back on plan now so hope there is not too much damage, haven’t been on scales due to problem standing but will weigh when I can next, will probably leave it till next Monday now!

Sorry to hear about your setback - how horrible that it happened when you were out on your own, it must have been horrible for you. You sound really fed up with it, especially as you're not able to go out walking.
Hope you feel better real soon, and big hugs on your steps to recovery xxx

Thanks for your warm wishes Sarah, I’m not going to let this get to me.
Well I am def back on the plan, found a bag of frozen taco quorn in the bottom of the freezer so decided it was about time I ate it up, I had a quick look for how many syns, but couldn’t find it, so did it by nutritional contents came out at 11 syns per 400g bag, I was amazed so I only had half the bag, it was lovely and very spicy, but certainly didn’t expect it to be high in syns

Well done on your sts considering the of days.

Do you often eat so many bananas? I know many people like to limit them to one a day. I only ever have 2 if i am running more than 15 miles.

teresa

Thanks for looking in, to be honest, I've never given it a thought, I suppose because there handy to eat on the move, I try and eat a lot of fruit as I'm not a lover of veg I might try giving them up for a week or limit it to 1 a day to see if it effects my losses, hope your doing well, will try and pop in and see your diary! :)

Had a Jacket potato today, I’ve forgotten how lovely they were, not easy finding jackets in perfect condition this time of year, but I was lucky today.

I can't believe its been 6 days since I've been on this site, I have been so busy.
Hi Donna, I will look out the recipie and let you know.
I haven't been on the plan this week due to not having time to think about what I'm doing.
I am going to try and get back on plan this week as I don't want to undo what I have acheived.
I did weigh yesterday (Monday) and STS again, still its better than a gain!!!!

Ditto what Claire says above x

ps look forward to recipe x

Thankyou for reminding me I completely forgot, mind like a sieve at the moment!

CHICKEN TETRAZZINI
Serves 4 (4 ¼ syns and 1 HEX A for cheese and milk & 1 HEX B per Person)
I make this when I follow green days, but you could do it on EE or Red
If you do it on Red day increase the chicken but you must count the pasta as syns
If you do it on EE increase the Chicken if you want
I used 1 healthy extra A for milk and cheese, but you do use slightly less than half on the milk
You could leave out the wine if you want
Ingredients
284g cooked chicken, diced (1 HEX B per serving)
100g button mushrooms, sliced (free)
175g cooked spaghetti, (free on Green or EE)
1x 400g tin of chopped tomatoes, drained (free)
For sauce
42g Marg (8.25 syns)
42g Self Raising Flour (6.75 syns)
300ml Chicken stock made with chicken Bovril and hot water
300ml semi skimmed Milk (75ml per serving half a syn is 125ml so just over quarter of a syn so counted it as half)
4x15ml spoons dry white wine (2 syns)
56g Ex Mature cheddar cheese, grated (½ Healthy Ex A per serving) (you could you RF cheese and use more but I like this one)
Salt
Pepper

Method
To make sauce melt marg in microwave for 30-45 seconds
Stir in flour and make into a roux
Stir in Stock then milk
Mix well return to microwave and cook until thickened stirring every minute,
Add the wine, cheese and seasoning, divide into 2 bowls, add the cooked chicken to one half, meanwhile fry the mushrooms in fry light, when cooked add to the other half of the sauce with the cooked and drained spaghetti
Put the pasta mix in the bottom of a large dish (I use a lasagne dish) top with the tinned tomatoes add the chicken mixture on top and bake for 25-30 minutes until golden brown.
Serve with veg or Salad
