Spicky chicken fried rice
Serves 4, free on Extra Easy
1lb 2oz long-grain rice
1 red chilli
1 red and yellow pepper
1 garlic clove
1" piece fresh ginger
2 pak choi
8 spring onions
1 egg
14oz chicken breasts
Fry Light
2tsp Chinese 5 spice powder
2oz beansprouts
3tbsp light soy sauce
freshly gound black pepper
Cook the rice. Deseed and slice the chilli and peppers, peel and crush the garlic, chop the ginger, shred the pak choi, slice the spring onions and beat the egg. Grill the chicken for 10-12mins on each side, or until cooked through. Allow to cool then chop.
Heat a wok sprayed with Fry Light. Add the rice, chilli, garilc, ginger and 5 spice powder and stir-fry for 4 mins. Add the remaining ingredients (except the egg), and fry for another 4 mins. Push the ingredients to one side of the pan. Add the egg to the other side and leave for about 10 secs until it starts to set. Break up the egg with a fork, stir through the other ingredients and serve.
