Pasta with Bacon, Leek & Mushrooms

    Hi I'm new on here but been doing SW for the last 18 months. I thought you might like this recipe, i had it for tea last night and it was gorgeous :)

    Pasta with Bacon, Leek & Mushrooms

    Ingredients / Serves 2

    Penne or Rigatoni Pasta

    4 Rashers of Smoked Bacon Chopped and fat removed (HEB if on Green)
    1 Large or 2 Small Leeks Chopped
    125g Mushrooms Sliced
    4 - 6Tbsp Half Fat Crème Fraiche (1.5 Syns per Tbsp)
    Handful of Fresh Parsley finely chopped
    25g Parmesan Cheese grated (HEA)
    Salt & Pepper

    Add the pasta shells to a pot of boiling salted water and cook according to packet instructions.
    Meanwhile, heat the frylight in a large pan and add the bacon.
    Fry for a few minutes until it is golden brown, and then add the leeks, mushrooms and a little salt and pepper.
    Stir over medium heat for 6–8 minutes until the leeks are tender.
    Drain the pasta and immediately toss with the bacon, leeks and mushrooms.
    Stir in the crème fraîche and scatter over the chopped parsley and parmesan shavings to serve.

    3 – 4.5 Syns per serving (depending on the amount of Crème Fraiche you use)
